Summer Pasta

It has been too long since I last posted, so I have brought out a favorite Summer Recipe to celebrate my return to blogging. I did not like vegetables at ALL when I was younger, but this pasta dish changed my mind about a few different veggies. This recipe originally calls for zucchini and squash, but you can substitute those for asparagus or peas or any other veggies you like.

Ingredients:
  •  1 box farfalle pasta
  • 2 yellow squash
  • 2 zucchini
  • 1 package Romano, Mozzarella, or Parmesan Cheese
  • 3 tb Olive Oil
  • 3 tb Butter
  • Oregano
  • Basil
  • Salt and Pepper to taste


While the water is warming up for the pasta add olive oil and butter to a large frying pan to sauté the squash and zucchini. Next, slice the squash and zucchini into halves/quarters depending on how small you want them to be. Once you have started boiling the pasta add the squash and zucchini to the frying pan and add oregano and basil to taste.  After the pasta has boiled drain and add to a large serving dish with the squash and zucchini and cheese.
